Blueberry Cupcake

Ingredients

Cake

  • 1 box of white cake mix
  • 3 eggs
  • 1 tablespoon of vanilla extract
  • 1 (8oz) of cream cheese (soften)
  • 1 cup of fresh blueberry syrup
  • 1 cup of oil
  • 1 cup of water

Blueberry Syrup

  • 2 cups of frozen blueberries
  • 2 scoops of brown sugar
  • 1 fresh lemon juice squeeze
  • 1/2 tablespoon of cinnamon
  • 1 cup of water
  • 2 tablespoon of cornstarch

Blueberry Icing

  • 1/4 cup of royal icing
  • 1/4 cup of blueberry syrup

Directions

Blueberry Syrup

In a sauce pan add blueberries, brown sugar, lemon juice, salt, cinnamon, cornstarch and water. Stir all of the ingredients together. Put sauce pan on medium high and let it comes to a boil. Let simmer for about 30 to 35 minutes or until sauce comes to a thick sauce texture. Stir occasionally just to make sure that everything is cooking evenly. After the sauce is done take off the heat and let it cool completely.

Cake

Pre-heat oven to 350 degrees

In a mixing bowl add the cake mix, eggs, vanilla, oil, and water. Mix everything together until smooth. Next, add your soften cream cheese and mix until smooth. After, the cake batter is smooth add your cool blueberry syrup. Mix very well until everything is combined.

Pour the batter into a grease cupcake pan and bake them for 15 to 20 minute are until the toothpick comes clean. Remove cupcakes from oven an them cool completely.

After the cupcakes are cool icing them with the blueberry icing. For the blueberry icing combined the blueberry syrup and royal icing together and dip the cupcakes into the icing.

Served with ice cream and enjoy!
