Blueberry Loaf Breakfast Cake

I love making blueberry cake from scratch but some time with a busy schedules its kind of get a little hard to baked from scratch so I found another way to bake one of my favorite cake the easy way. Check it out below:

Ingredients

1 box of muffin mix

1 can of blueberry

2 eggs

2/3 cup of milk

1/3 cup of oil

Directions

  1. Pre-heat the oven to 350 degrees
  2. On the back of the box follow the instructions.
  3. Pour the muffin mix into the bowl add the egg, oil, and milk.
  4. Stir everything together until everything is fully incorporated
  5. Put to the side and let it sit for about 2 minutes.
  6. After 2 minutes are up stir one more time and pour the mixture into your grease loaf pan.
  7. Baked for 40 minutes until loaf is complete baked
  8.  Take out of the oven and set it to the side to cool.
  9. Slice a piece and served  with some coffee. Enjoy!!!

It was a hard first few months trying to figure out to stay in school as well take care of a child. During my last year of college I got my first Job at a Private Country Club. Well three years later I finish with my Bachelor of Science of Administration degree next spring I will go back to get my Master degree in Psychology.
